  Black Beans For Tacos
  • These black beans of Terry's are outstanding on any taco you care to make but we love them on our fish tacos best.
  • Beans can be made ahead of time and will keep in the refrigertor for days

  • 2- 15 ounce cans black beans, drained and rinsed
  • 1/2 cup sweet onions, finely chopped
  • 1/4 cup red wine vinegar
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons sugar
  • 1 tablespoon ground cumin
  • 1 tablespoon fresh garlic, finely chopped
  • 1 tablespoon serrano pepper, finely chopped
  • 2 teaspoons oregano
  • 2 teaspoons sea salt


  • In a large saute pan heat olive oil on medium heat. Add onion and cook for about 3 minutes, then add garlic and serrano pepper, saute 1 minute. Add beans, salt, oregano, cumin, vinegar, and sugar. Mash with a potato masher leaving it chunky.Cook on low heat for about 5 minutes. Serve with tacos.
