Cheesy Grits
 
  • These make a wonderful first course or a main meal. We serve them buffet style on Christmas Day!
  • Recipe for Shrimp Gravy

Ingredients
  • 1/2 cup shallots, finely chopped
  • 1 tablespoon garlic, minced
  • 4 tablespoons butter
  • 4 cups water
  • 1 cup uncooked grits
  • 2 teaspoons kosher salt
  • 2 eggs
  • 2 cups sharp cheddar cheese, shredded

       

Directions
  • In a large pot (dutch oven) melt 4 tablespoons butter, add shallots and garlic, saute on low for about 5 minutes. Add water and salt, bring to a boil. Whisk in grits. Stir constantly until grits come to a boil. Cover and reduce heat to low, cook until grits are thick about 10 minutes
  • Beat eggs in bowl. Gently temper eggs with hot grits, pour egg mixture into grits. Add 1 1/2 cups of cheese, stir well. Remove from heat and pour into casserole dish. Bake 30 minutes in preheated oven at 350 degrees. Top with remaining 1/2 cup cheese, continue baking another 10 minutes until bubbly. Remove from oven, let rest for about 10 minutes before serving. Serve and slather with Shrimp Gravy. Serves 6 to 8 people. Enjoy!
