Taste of the Great Lakes
A Casual Buffet Dinner featuring Sustainable Fish of the Great Lakes.
Right in our own backyard lays one of the great wonders of the world, freshwater inland seas, called the Great Lakes. These lakes hold more than 20% of the world’s fresh water and are home to many different types of “local” and sustainable fish. Tonight’s dinner is a celebration of these fish, incorporated into our original recipes as a sumptuous feast for your taste buds. There will be a short presentation by Kassia Perpich, Shedd Aquarium's Sustainable Seafood Coordinator on the issues of sustainability and your fish choices. We will also do a run down on Shedd Aquarium’s Great Lakes Rite Bite card.
Dirk and Terry will then present 10 original dishes, family style, ranging from appetizers to main courses of only sustainable “local fish, such as…
Smoked rainbow trout wraps, Smoked whitefish spread, Panko fried smelt, Walleye sandwich, Fish croquettes, Plank smoked lake trout, Tempura perch, “Cook County’ fish boil, Miso glazed trout and Terry-aki white bass sushi.
This is not a cooking class though we will give out the recipes and product information. We want you to try some new foods, learn about what we can do to help our local aquatic environment, eat and have fun. We will have a raffle for a tasty prize too.
BYOB your favorite wine or beverage and we will provide the rest.
$10.00 of each class fee will be donated to the Wildlife Foundation of Florida for the Charles Stroh Fund for the Restoration of Davis Reef. An added bonus for your karma while satisfying your appetite! This dinner is limited to the first 25 people so call ASAP.
