 Macadamia Sesame Incrusted Mahi Mahi Fillets
 
  • Mahi Mahi has a medium flavored firm fleshed fillet and can be grilled, broiled or sauted. It is most plentiful in the winter months and at its best value at that time.
  • This island recipe with rich with the macadamia nuts but every now and then, it's a tasty recipe to prepare. As with most of these recipes you can substitute other fish for the mahi, snapper is particulaly good.
  • I like to substitute coconut for the sesame seeds for a nice variation.


Ingredients
  • 4-8oz. mahi fillets, skinned
  • 1/4 cup flour
  • salt and pepper to taste, just a pinch of each
  • 1 egg, well beaten
  • 1/8 cup macadamia nuts, chopped
  • 1/8 cup toasted sesame seeds
  • 1/4 cup canola or vegetable oil

       

Directions
  • Mix flour, salt and pepper in a plastic bag. Add mahi and coat with the flour mixture. Dip fillets in egg wash but do not rinse off the flour, just get the fillet wet. Mix macadamia nuts and sesame seeds in another plastic bag. Add wet fillets to this mixture and coat well. Remove from the bag and let the nut mixture set for about five minutes. Heat oil to about 375 degrees. Saute fillets about 4 minutes per side until dark golden brown. Serve with basmati rice as a side.
  • Serves four people
