Homemade Blackening Spice
 
  • Blackening spice is a wonderful flavor on many types of fish and seafood, even chicken and steak. Especially good grilled or pan sauteed The spice rub forms a coating on your fish so it doesn't stick when grilled.
  • Terry's recipe has no salt so you can add salt to your own tastes. Season with sea salt or kosher salt.
  • Double or triple the recipe to keep some of the spice blend on hand for convenience.


Ingredients
  • 4 tablespoons sweet smoked paprika
  • 4 tablespoons granulated garlic
  • 3 teaspoons cayenne pepper
  • 3 teaspoons black pepper
  • 2 teaspoons oregano
  • salt or not, to your taste
       

Directions

Blackening fish

  • Rub fish with a light coating of olive oil then dust completely with blackening spice. The more you put on the spicier it is.
  • Grill or saute fish on a hot grill or saute pan about 3 to 4 minutes per side.
