Mediterranean Asian Carp Burgers with Arugula, Tzatziki and Pickled Onions

  • Yet another awesome creation by Terry,  a  tasty, healthy and VERY sustainable Asian carp BBQ option! The combination of flavors will tantilaze your taste buds and this burger will become a regular on your grill! By consuming Asian carp we are contributioning to the reduction of the current population plus helping our local environment and enjoying a healthy lean protien that I think is much tastier than the ever popular tilapia.
  • The pickled onions in themselves are a great treat to have on hand to compliment any sandwich or salad.

Ingredients

Pickled Onions

  • 8 cups red onion, thinly sliced
  • 1 1/2 cups white vinegar
  • 6 tablespoons sugar
  • 2 teaspoons kosher salt

Add onions and simmer for 5 minutes. Let cool. Put in container with lid. Refrigerate untill ready to use. Keeps refrigerated for up to a month.

Carp
