Plantain Chips
  • These chip are great for all kinds of appetizers and dipping but we especially like them for our ceviches.
  • Make them a couple of days ahead and store them in a ziplock bag.

  • 2-3 green plantains, peeled (will make about 6-8 cups)
  • canola oil
  • sea salt


  • With a mandolin or slicing blade of a food processor, slice plantains. Heat canola oil in a deep skillet or dutch oven. Oil should be about 3 inches deep and at 350 degrees. Gently slide plantains into oil and do not over crowd.Chips should take about 3 to 4 minutes. Remove and place on paper towels season with sea salt. Continue frying in batches.        Que Rico!
