Toasted Almond Pesto and Parmesan

Rainbow Trout

 
  • First check out the recipe for Toasted Almond Pesto.* Once you have the pesto in hand the rest is easy.
  • Pesto works well on most types of fish, salmon, halibut, tilapia, etc. It adds great flavor while keeping the fish moist during the cooking process.
  • The extra cheese and toasted almonds really add to the final dish!

Ingredients
  • One recipe Toasted Almond Pesto*
  • 4 tablespoons sliced almonds, toasted
  • 4 tablespoons parmesan cheese, freshly grated
  • 4- 8 ounce fillets rainbow trout, skinned

       

Directions
  • Preheat oven to 425 degrees.
  • Brush baking pan lightly with olive oil. Put fillets on the pan. Spread a good coating of pesto over each fillet. If the pesto is at room temperature it will spread easier.
  • Sprinkle one tablespoon of parmesan cheese over the pesto and then one tablespoon of toasted almonds over the cheese for each fillet.
  • Bake for 8 minutes, then place under broiler for 1 to 2 minutes to brown the top. Be carefull, you don't want to burn the top, just brown it nicely.
  • This recipe serves four. Enjoy!
