  Zesty Smoked Trout Wraps
  • I'm not a big fan  of wraps but when I tried these trout wraps of Terry's, I quickly changed my mind! Smoked trout and her flavorful sauce make the perfect combination.
  • Make the wraps ahead of time, use them for lunch, picnics, or sliced for appetizers. You can make the zesty spread and leave it in the refrigerator for up to a week. It's great on other sandwiches too. Use it as a dip for veggies, etc. My favorite brand of smoked rainbow trout is from Ducktrap River Farms.
  • Try using different flavors of tortilla wraps. I like spinach and roasted garlic.


Savory Sauce

  • 1/2 cup pecorino romano, grated
  • 1/4 cup mayonnaise
  • 1-2 ounce can anchovies with oil
  • 2 tablespoons fresh garlic, chopped
  • 2 tablespoons hot giardinera, finely chopped
  • 1 tablespoon dijon mustard
  • 1 teaspoon black pepper

Sauteed veggies

  • 2 cups onions, sliced
  • 2 cups sweet bell peppers, sliced
  • 2 tablespoons extra virgin olive oil
  • 1/2 pound smoked rainbow trout fillets, skinned and cut in half
  • Arugula, mesclun or mixed greens, your choice
  • Large flour tortilla wraps

  • Add all ingredients for sauce into food processor, blend until creamy.
  • Saute veggies in olive oil until tender, about 3 to 4 minutes.
  • Lay tortilla wrap flat, spread with sauce, add veggies, mesclun or greens and smoked trout. Roll wrap tightly. Slice and serve. This recipe makes 4 wraps. Enjoy
