BBQ Corvina Poor Boys with Cajun Mayo

Ingredients

Wet BBQ Rub for Fish

  • 1/3 cup extra virgin olive oil

  • 1 tablespoon fresh garlic, chopped

  • 1 teaspoon smoked paprika

  • 1/2 teaspoon cumin

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon pink salt

  • 1/4 teaspoon cayenne pepper

  • 2 pounds fresh corvina, skinned and cut into 6 ounce pieces.

Cajun Mayo

  • 1/4 cup canola mayo

  • 2 tablespoons ketchup

  • 1 tablespoon sriracha

  • 1 teaspoon fresh garlic, chopped

  • 1/2 teaspoon smoked paprika

Directions

  • Mix all ingredients for rub together in a ziplock bag. Add fish and massage rub onto fish through the bag. Marinate for about 45 minutes at room temperature.

  • Mix all ingredients for cajun mayo together in a small bowl and set aside.

  • Grill fish on high for about 4 to 5 minutes per side until done.

  • Spread mayo on bread, add fish and top with spicy slaw mix.

  • Serves 4 to 5 people. Enjoy!
