FLORIDA STONE CRAB NOW IN SEASON

Jumbo Claws!

Stone crab are harvested using small pots or traps, With the fishermen using 200 to 300 hundred pots each. The pots are dropped to the bottom and are attached to a buoy floating at the surface. When the pots are brought up to the boat, the biggest claw is snapped off and the live crab is returned to the ocean to re-grow their claws. Female egg-bearing crabs are returned to the water with both of their claws to insure survival of the eggs. There is also a law requiring a minimum size limit for the claw of 2.75" measured from knuckle to claw.

These freshly removed claws are called "green", because they are not cooked yet and do not have the distinctive red color of a cooked claw. Green claws are not refrigerated on the boat, because if they are the meat will stick to the shell after they are cooked. Once all the pots are pulled, the claws are brought to a processing plant on shore to be cooked. The claws must be cooked the same day they are pulled.  Unsalted water is brought to a boil and then the claws are added, once the water comes back up to a boil, the claws are cooked for 6 to 8 minutes. The claws are then chilled immediately in an ice bath and brought down to 32 degrees. They are then laid out on a sorting table to be divided into sizes, medium, large, large jumbo, jumbo, and colassol. Florida stone crab is known for its sweet succulence and snowy white meat, stone crab has a delicate texture, rich mouth feel and salty finish.
