Fish en Papillote

En papilliote is simply fish wrapped in paper and steamed.

  • This easy and quick recipe works well with most fish. Some of my favorites are salmon and halibut.

  • Preheat the oven to 425 degrees

Ingredients

  • 2 -8oz. fillets of fish, skinned

  • 4 asparagus spears

  • 2 large florets of broccoli

  • 6 green beans

  • 2 slices of red onion

  • 2 slices each of red, orange, and yellow peppers
    (you can use almost any vegetable you like or any combination you like)

  • 2 tablespoons of olive oil

  • 1 lemon, cut in half

  • Salt and pepper to taste

  • 2 sheets of parchment paper (foil is an option also, especially if you want use the grill).
       

Directions

  • Julienne all of the vegetables. Place in a small bowl,

  • add olive oil, salt, pepper, and squeeze one half of the lemon into the mix.

  • Fold the parchment paper in half, and then unfold it.

  • Place the fish on the top half of the paper with the bottom edge of the fillet on the crease.

  • Divide vegetable mix in half and place each half onto each fillet.

  • Fold the paper over the fish and vegetables so that the edges of the paper meet.

  • Starting in one corner, roll the edges tightly together around the fish, until a closed pouch is formed.

  • Fold the final corner very tight or you can use a paper clip to seal the package.

  • Place the package on a pan and bake 15 to 18 minutes.

  • Remove fish from the oven. It can be served and eaten directly in the paper or slid onto a serving plate.
