Plantain Chips

Ingredients

  • 2-3 green plantains, peeled (will make about 6-8 cups)

  • canola oil

  • sea salt

Directions

  • With a mandolin or slicing blade of a food processor, slice plantains.

  • Heat canola oil in a deep skillet or dutch oven. Oil should be about 3 inches deep and at 350 degrees.

  • Gently slide plantains into oil and do not over crowd.

  • Chips should take about 3 to 4 minutes.

  • Remove and place on paper towels season with sea salt. Continue frying in batches.
