Thai Fish Soup

Ingredients

  • 8 cups fish stock (we carry this or make your own)

  • 2-13.5 ounce cans coconut milk (you can use lite coconut milk)

  • 1 cup fresh lime juice

  • 1 cup fresh cilantro, chopped

  • 1 cup green onions, sliced thin

  • 1/2 cup fresh ginger, peeled and finely chopped

  • 1/2 tablespoon fresh garlic, chopped

  • 1/2 cup thai fish sauce

  • 3/4 cup red pepper, chopped

  • 3/4 cup yellow pepper, chopped

  • 2 tablespoons lemon zest

  • 2 tablespoons lime zest

  • 1 tablespoon sriracha hot sauce

  • 2 pounds firm fish, skinned and chunked, such as halibut, snapper, marlin, or tilapia (most fish or seafood will work in this recipe)

  • 1/4 cup fresh cilantro, coarsely chopped 

Directions

  • Bring fish stock to a simmer, add all other ingredients, except the fish and 1/4 cup cilantro. Bring back to a simmer. Cook for about 5 minutes. Add fish and continue to simmer for 8 to 10 minutes. Add cilantro,
