BBQ Corvina Poor Boys with Cajun Mayo
Wet BBQ Rub for Fish
1/3 cup extra virgin olive oil
1 tablespoon fresh garlic, chopped
1 teaspoon smoked paprika
1/2 teaspoon cumin
1/2 teaspoon black pepper
1/2 teaspoon pink salt
1/4 teaspoon cayenne pepper
2 pounds fresh corvina, skinned and cut into 6 ounce pieces.
1/4 cup canola mayo
2 tablespoons ketchup
1 tablespoon sriracha
1 teaspoon fresh garlic, chopped
1/2 teaspoon smoked paprika
Mix all ingredients for rub together in a ziplock bag. Add fish and massage rub onto fish through the bag. Marinate for about 45 minutes at room temperature.
Mix all ingredients for cajun mayo together in a small bowl and set aside.
Grill fish on high for about 4 to 5 minutes per side until done.
Spread mayo on bread, add fish and top with spicy slaw mix.
Serves 4 to 5 people. Enjoy!
