Date and Peppadew Pepper Tapenade
1 1/2 cups peppadew pepper, chopped
1/2 cup extra virgin olive oil
1/2 cup dates, finely minced
1 tablespoon dijon mustard
2 teaspoons fresh garlic, finely minced
2 teaspoons fresh orgegano, finely minced
salt and pepper to taste
In food processor, place all ingredientsand pulse until finely chopped. Add salt and pepper to taste.
This recipe makes enough to stuff about 3 to 4 pounds of fish.
