Date and Peppadew Pepper Tapenade

Ingredients

  • 1 1/2 cups peppadew pepper, chopped

  • 1/2 cup extra virgin olive oil

  • 1/2 cup dates, finely minced

  • 1 tablespoon dijon mustard

  • 2 teaspoons fresh garlic, finely minced

  • 2 teaspoons fresh orgegano, finely minced

  • salt and pepper to taste

Directions

  • In food processor, place all ingredientsand pulse until finely chopped. Add salt and pepper to taste.

  • This recipe makes enough to stuff about 3 to 4 pounds of fish.
