Fresh Herb Dressing/Marinade


  • 2 cups extra virgin olive oil

  • 1 cup white wine vinegar

  • 1/4 cup fresh thyme

  • 1/4 cup fresh oregano

  • 1/2 cup fresh chives

  • 2 tablespoons Dijon mustard

  • 1 tablespoon kosher salt

  • 1/2 tablespoon black pepper 


  • Add all ingredients to blender or food processor and puree until smooth. Slowly add the olive oil while machine is running.

  • Marinade fish for 1/2 hour. Grill or broil. Before serving, drizzle with a little fresh marinade and garnish with some fresh herbs before serving.
