Grilled Squid Steaks with Greek Orzo Salad
1/2 pound uncooked orzo
2 cups diced cucumber
3/4 cup diced red onion
1/2 cup chopped and pitted kalamata olives
2 cups diced red tomatoes
1 cup crumbled feta cheese
1 cup diced sweet red pepper
1/2 cup freshly squeezed lemon juice
1 tablespoon finely chopped garlic
2 teaspoons oregano
1 teaspoon fresh thyme-preferably lemon thyme
2 teaspoon salt
1 teaspoon black pepper
3/4 cup extra virgin olive oil
6 Squid steaks, approximately 1/3 pound each: season squid with olive oil and herbed sea salt(or salt and pepper).
Cook orzo according to package directions. Meanwhile chop salad ingredients, cucumber, onions, tomato, and pepper. Put in a large bowl. Crumble in feta cheese and chopped kalamata olives.
Dressing: Combine lemon juice, garlic, thyme, oregano, salt and pepper with a whisk. Slowly pour in olive oil while stirring with whisk. It should thicken. When orzo is ready, drain well, combine orzo with chopped vegetables. Stir in dressing. Squid grills very quickly about 1 minute per side over a very hot fire. Remove squid from grill, slice into strips, and arrange over salad.
