"Light" Crab Bisque
6 cups fish stock (available @ Dirk's)
4 cups shrimp or lobster stock( available @ Dirk's)
1 cup canned diced tomatoes
1 cups onions, chopped
1 tablespoon butter
1/2 cup arborio rice
2 pounds crab meat (use claw meat or "special" crabmeat for the most economical choice).
1/2 cup heavy cream
1/2 teaspoon cayenne pepper
1 teaspoon sriracha hot sauce
1 teaspoon salt
1/4 cup of white wine
Saute onions in butter until tender, about 4 to 6 minutes.
Add diced tomatoes
Add both stocks to pot and bring to a simmer.
Add rice to stock mixture. Stir and continue cooking on medium heat until rice is tender.
With a stick blender, puree mixture.
Add all other ingredients to pot. Stir and bring back to a simmer..
Serves 8 to 10 people
Cooked lobster or shrimp work equally well with this recipe.
