"Light" Crab Bisque

Ingredients

  • 6 cups fish stock (available @ Dirk's)

  • 4 cups shrimp or lobster stock( available @ Dirk's)

  • 1 cup canned diced tomatoes

  • 1 cups onions, chopped

  • 1 tablespoon butter

  • 1/2 cup arborio rice

  • 2 pounds crab meat (use claw meat or "special" crabmeat for the most economical choice).

  • 1/2 cup heavy cream

  • 1/2 teaspoon cayenne pepper

  • 1 teaspoon sriracha hot sauce

  • 1 teaspoon salt

  • 1/4 cup of white wine

Directions

  • Saute onions in butter until tender, about 4 to 6 minutes.

  • Add diced tomatoes

  • Add both stocks to pot and bring to a simmer.

  • Add rice to stock mixture. Stir and continue cooking on medium heat until rice is tender.

  • With a stick blender, puree mixture.

  • Add all other ingredients to pot. Stir and bring back to a simmer..

  • Serves 8 to 10 people

  • Cooked lobster or shrimp work equally well with this recipe.
