Mediterranean Watermelon Salad



  • 1 seedless watermelon, cut into triangles, 2 inches thick

  • 2 cups seedless cucumbers, diced

  • 1 1/2 cups Greek feta cheese, chunked (we prefer sheep's milk feta)

  • 1/2 cup sweet onion, diced

  • 3 cups tomatoes preferably plum ,diced

  • 1/2 cup flat leaf parsley, loosely packed


  • 1/2 cup lemon juice, fresh squeezed

  • 1/2 cup plus 2 tablespoons extra virgin olive oil

  • 1 tablespoon fresh oregano

  • 1 tablespoon fresh garlic, finely chopped

  • 2 teaspoons kosher salt

  • 1 teaspoon black pepper



  • Combine cucumber, onion, tomatoes, and parsley in large bowl.


  • In blender or food processor add lemon juice, garlic, oregano, salt and pepper. Blend until well combined. Slowly pour olive oil thru top. Pour over salad.

  • Grill should be medium hot. Prepare watermelon for grill, brush with 2 tablespoons olive oil on both sides. Grill watermelon first about 1 to 2 minute per side to get grill marks.

  • To serve, place cheese on top of watermelon and top with greens.

  • Finish by topping with grilled sardine fillets(see grilled sardine recipe) or grilled fish of choice. Enjoy!
