Scampi Sauce for Shrimp

Ingredients

  • 1/2 cup dry sherry

  • 1/4 cup fresh lemon juice

  • 4 tablespoons butter

  • 2 tablespoons extra virgin olive oil

  • 2 tablespoons parsley, chopped

  • 1 tablespoon garlic, chopped

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

Directions

  • Heat olive oil on low heat, add garlic, saute until fragrant, do not burn.

  • Add sherry, simmer about 2 minutes, add lemon juice, simmer 2 minutes.

  • Add butter, pepper, and salt, stirring while melting.

  • Remove from heat and add parsley. Serve over shrimp
