Scampi Sauce for Shrimp
Ingredients
1/2 cup dry sherry
1/4 cup fresh lemon juice
4 tablespoons butter
2 tablespoons extra virgin olive oil
2 tablespoons parsley, chopped
1 tablespoon garlic, chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
Directions
Heat olive oil on low heat, add garlic, saute until fragrant, do not burn.
Add sherry, simmer about 2 minutes, add lemon juice, simmer 2 minutes.
Add butter, pepper, and salt, stirring while melting.
Remove from heat and add parsley. Serve over shrimp
