Smoked Salmon Frittata
1/2 cup hickory hot smoked salmon
1/2 cup red onions, sliced thin
1/3 butter, unsalted
3 tablespoons Neuchatel cheese
1 tablespoon capers
1 teaspoon garlic, freshly chopped
black pepper to taste, large pinch
salt to taste
10 eggs, whisked
3 cups seasonal vegetables of choice or mixed sweet peppers, asparagus tips, grape tomatoes.
This can be cooked on the stove or a medium hot grill.
Saute all veggies in 1/4 cup butter on medium heat until tender. Remove from heat and stir in cheese until melted, add remaining ingredients, except eggs. Mix well. Slowly pour in eggs and work gently into the mixture. cover with foil or lid then put back on grill about 5 minutes until set. Remove from heat, slice and serve.
Serves about 6 people. Enjoy!
