Smoked Whitefish Salad
This easy to make salad is one of the very best I've ever tasted. Simple to make, you just need to use the best quality whole or steaks of smoked whitefish. It needs to be flaked off the bones for maximum flavor and moistness. Our smoked whitefish come from Two Rivers, Wisconsin. Caught by Suzy Q Fisheries which is a small family owned business that catches and smokes their own trap net fish.Use this as an appetizer with crackers or as a sandwich on toasted bread with thin sliced sliced hard boiled eggs.
This salad can be made a couple of days before you need it and will keep for up to a week. Serve at room temp or close to it for the most flavor.
Ingredients
2 pounds smoked whitefish on the bone
1/2 cup mayonnaise
1 tablespoon dry parsley
Directions
First peel the skin off the whitefish, then flake the meat off the bones into a large bowl. When complete, sift through the meat to check for small bones. Add mayonnaise and parsley. mix gently by hand together.
Makes enough for appetizers for 6 to 8 people, or sandwichs for 4 people. Enjoy!
