Spicy Cabbage Slaw

Ingredients

Slaw base

  • 8 cups savoy cabbage, shredded

  • 2 1/2 cups red pepper, julienne

  • 2 cups carrots, shredded

  • 1 1/2 cups red onion, diced

Slaw dressing

  • 1 cup extra virgin olive oil

  • 1/2 cup white wine vinegar

  • 1/4 cup roasted red pepper

  • 1 tablespoon fresh garlic, chopped

  • 1 tablespoon sriracha

  • 3 teaspoons kosher salt 

Directions

  • Combine slaw base in a large bowl.

  • Put all dressing ingredients, except olive oil, into food processor or blender and combine well. Slowly drizzle olive oil through top of machine while blending. Pour over slaw base and toss  well.

  • Slaw serves 6 to 8 people as a side. Enjoy!
