Tomato Jalapeno Chutney (for Tacos)

Ingredients

  • 4 pints grape tomatoes, chopped

  • 3 cups red onion, finely chopped

  • 2 cups dark brown sugar

  • 1 cup cilantro, finely chopped

  • 1/2 cup jalapeno, finely chopped

  • 1/4 cup apple cider vinegar

  • 1/4 cup fresh lime juice

  • 2 tablespoons canola oil

  • 3 tablespoons fresh garlic, finely chopped

  • 1 tablespoon lime zest

  • 1 tablespoon kosher salt

  • 2 teaspoons black pepper

Directions

  • Start by chopping onions, garlic, jalapeno, you can use a food processor to chop the veggies.

  • Put veggies in a large dutch oven with canola oil. Saute on medium heat 3 to 4 minutes. Add remaining ingredients except for the cilantro. Bring back to a boil then simmer on medium heat about 30 minutes until thickened and reduced. Cool and add cilantro.

  • Makes enough for at least 20 tacos. Enjoy!
