Tomato Jalapeno Chutney (for Tacos)
4 pints grape tomatoes, chopped
3 cups red onion, finely chopped
2 cups dark brown sugar
1 cup cilantro, finely chopped
1/2 cup jalapeno, finely chopped
1/4 cup apple cider vinegar
1/4 cup fresh lime juice
2 tablespoons canola oil
3 tablespoons fresh garlic, finely chopped
1 tablespoon lime zest
1 tablespoon kosher salt
2 teaspoons black pepper
Start by chopping onions, garlic, jalapeno, you can use a food processor to chop the veggies.
Put veggies in a large dutch oven with canola oil. Saute on medium heat 3 to 4 minutes. Add remaining ingredients except for the cilantro. Bring back to a boil then simmer on medium heat about 30 minutes until thickened and reduced. Cool and add cilantro.
Makes enough for at least 20 tacos. Enjoy!
