Black Beans ala Terry

Ingredients

  • 2 - 15 oz. cans of black beans, drained and rinsed

  • 1/2 cup onion, finely chopped

  • 1/2 cup sweet red pepper, chopped

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon fresh garlic, finely minced

  • 2 teaspoons ground cumin

  • 1 teaspoon oregano

  • 1 teaspoon kosher or sea salt

Directions

  • Heat olive oil on medium heat in a saute pan.

  • Add onion and pepper, saute about 3 minutes.

  • Add garlic, cumin, and oregano. Saute about 1 minute, add beans and salt, stir to combine.

  • Remove from pan and place in bowl.
