Black Beans ala Terry
2 - 15 oz. cans of black beans, drained and rinsed
1/2 cup onion, finely chopped
1/2 cup sweet red pepper, chopped
2 tablespoons extra virgin olive oil
1 tablespoon fresh garlic, finely minced
2 teaspoons ground cumin
1 teaspoon oregano
1 teaspoon kosher or sea salt
Heat olive oil on medium heat in a saute pan.
Add onion and pepper, saute about 3 minutes.
Add garlic, cumin, and oregano. Saute about 1 minute, add beans and salt, stir to combine.
Remove from pan and place in bowl.
