Chilled Avocado Soup

Ingredients

  • 1/4 cup extra virgin olive oil

  • 1 1/2 cups sweet onion, chopped

  • 1 tablespoon garlic, chopped

  • 1/4 cup jalapeno pepper, chopped(with or without seeds depending on how hot you like it)

  • 1/4 cup lime juice

  • 1/2 cup mirin

  • 2 cans lite coconut milk

  • 1/4 cup champagne vinegar or white wine vinegar

  • 3 teaspoons salt

  • 2 large Haas avocados or 3 smaller ones

Directions

  • In saute pan heat olive oil, add onions, garlic and jalapenos, cook until very tender, about 10 minutes. Pour into blender or food processor. Combine until smooth, add other ingredients, process until smooth and creamy. Taste for salt , adjust if necessary. Serves 6 to 8 people as a first course
