Fish Piccata
This simple recipe will work well with most fish.
Almost any thin skinless fillet of most fish will work.
The flavor combinations are great and it’s quick to prepare
This recipes serves two people.
Ingredients
1 lb. of sole, skate, snapper, tilapia are few of my favorites for this dish.
1/4 cup flour
Salt and pepper to taste
1/4 cup olive oil
1/2 tablespoon chopped garlic
2 tablespoons small capers
1/2 cup white wine (whatever you're drinking)
1/4 cup lemon juice
Directions
Season the flour with a little salt and pepper.
Dust the fillets with the seasoned flour.
Saute the fish in olive oil until the fillets get a little browned, about a minute per side.
Remove from the pan and set aside.
Add chopped garlic to the hot oil and cook for about 2 minutes.
Next add capers, wine, and lemon juice. Bring back to a simmer. Set the fish fillets carefully into the sauce.
Saute the fish for about 3 to 4 minutes per side.
Set the cooked fish on the plate and pour remaining sauce over the fish.
Serve with rice or steamed vegetables on the side and don't forget the rest of the wine!
