Fish en Papillote
En papilliote is simply fish wrapped in paper and steamed.
This easy and quick recipe works well with most fish. Some of my favorites are salmon and halibut.
Preheat the oven to 425 degrees
Ingredients
2 -8oz. fillets of fish, skinned
4 asparagus spears
2 large florets of broccoli
6 green beans
2 slices of red onion
2 slices each of red, orange, and yellow peppers
(you can use almost any vegetable you like or any combination you like)2 tablespoons of olive oil
1 lemon, cut in half
Salt and pepper to taste
2 sheets of parchment paper (foil is an option also, especially if you want use the grill).
Directions
Julienne all of the vegetables. Place in a small bowl,
add olive oil, salt, pepper, and squeeze one half of the lemon into the mix.
Fold the parchment paper in half, and then unfold it.
Place the fish on the top half of the paper with the bottom edge of the fillet on the crease.
Divide vegetable mix in half and place each half onto each fillet.
Fold the paper over the fish and vegetables so that the edges of the paper meet.
Starting in one corner, roll the edges tightly together around the fish, until a closed pouch is formed.
Fold the final corner very tight or you can use a paper clip to seal the package.
Place the package on a pan and bake 15 to 18 minutes.
Remove fish from the oven. It can be served and eaten directly in the paper or slid onto a serving plate.
