Fresh Corn and Black Bean Salad

Ingredients

  • 1/4 cup extra virgin olive oil

  • 1 cup red onion, diced

  • 2 tablespoons fresh garlic, chopped

  • 4 cups fresh corn, shucked off of about 6 ears

  • 3 teaspoons salt

  • 2 15 ounce cans black beans, drained

  • 3 cups tomatoes, diced

  • 1 1/2 cups orange pepper, diced

  • 1 cup cilantro, finely chopped

  • 1/4 cup fresh lime juice

  • 1 medium jalapeno pepper, roasted, seeded, diced

  • 1 teaspoon smoked paprika

Directions

  • Chop and measure all ingredients. In saute pan heat olive oil, add onions and garlic. Saute about one minute on high heat. Add shucked corn with 2 teaspoons salt. Saute 2 to 3 minutes until corn is crisp tender. Remove from heat and let cool. Combine all other ingredients and remaining teaspoon of salt. Stir in corn mixture. Chill for at least 2 hours

  • Serves 6 to 8 people. Enjoy!
