Fresh Corn & Black Bean Salad
Ingredients
1/4 cup extra virgin olive oil
1 cup red onion, diced
2 tablespoons fresh garlic, chopped
4 cups fresh corn, shucked off of about 6 ears
3 teaspoons salt
2 15 ounce cans black beans, drained
3 cups tomatoes, diced
1 1/2 cups orange pepper, diced
1 cup cilantro, finely chopped
1/4 cup fresh lime juice
1 medium jalapeno pepper, roasted, seeded, diced
1 teaspoon smoked paprika
Directions
Chop and measure all ingredients. In saute pan heat olive oil, add onions and garlic. Saute about one minute on high heat. Add shucked corn with 2 teaspoons salt. Saute 2 to 3 minutes until corn is crisp tender. Remove from heat and let cool. Combine all other ingredients and remaining teaspoon of salt. Stir in corn mixture. Chill for at least 2 hours
Serves 6 to 8 people. Enjoy!
