Fresh Mango and Pineapple Salsa
2 cups ripe mangoes, diced
2 cups pineapple, diced
3/4 cup roasted red pepper, finely chopped
3/4 cup cilantro, finely chopped
1/2 cup red onion, finely chopped
1 tablespoon jalapeno pepper, finely chopped (with or without seeds, depending on how hot you like it)
3 tablespoons fresh lime juice
2 teaspoons salt
1 ripe avocado, diced (optional)
Simply combine all ingredients into a bowl and mix well. Store in the refrigerator until you are ready to use it.
The avocado should be added last so it stays firm in the salsa.
