Fresh Mango and Pineapple Salsa


  • 2 cups ripe mangoes, diced

  • 2 cups pineapple, diced

  • 3/4 cup roasted red pepper, finely chopped

  • 3/4 cup cilantro, finely chopped

  • 1/2 cup red onion, finely chopped

  • 1 tablespoon jalapeno pepper, finely chopped (with or without seeds, depending on how hot you like it)

  • 3 tablespoons fresh lime juice

  • 2 teaspoons salt

  • 1 ripe avocado, diced (optional) 


  • Simply combine all ingredients into a bowl and mix well. Store in the refrigerator until you are ready to use it.

  • The avocado should be added last so it stays firm in the salsa.
