Guava Balsamic Glaze/BBQ Sauce
3/4 cup onion, finely processed or grated
10 ounces guava paste (Goya brand comes in a can which you can find in the Hispanic food aisle at most stores)
1/2 cup balsamic vinegar
2 tablespoons extra virgin olive oil
2 tablespoons fresh garlic, finely processed or grated
2 teaspoons kosher salt
1 tablespoon tomato paste
1 tablespoon hot smoked paprika
Heat olive oil in saucepan, add onion and garlic, cook on medium heat about 5 minutes. Cube guava paste, add to pan with balsamic vinegar, Reduce temperature to low. Simmer until guava melts down to a thick liquid, about 10 minutes. Add tomato paste, paprika, and salt. Simmer 2 to 3 minutes, remove from heat.
This recipe yields enough to cover about 2 to 3 pounds of fish (or meat). Enjoy!
