Homemade Blackening Spice


  • 4 tablespoons sweet smoked paprika

  • 4 tablespoons granulated garlic

  • 3 teaspoons cayenne pepper

  • 3 teaspoons black pepper

  • 2 teaspoons oregano

  • salt or not, to your taste


Blackening fish

  • Rub fish with a light coating of olive oil then dust completely with blackening spice. The more you put on the spicier it is.

  • Grill or saute fish on a hot grill or saute pan about 3 to 4 minutes per side.
