Homemade Blackening Spice
4 tablespoons sweet smoked paprika
4 tablespoons granulated garlic
3 teaspoons cayenne pepper
3 teaspoons black pepper
2 teaspoons oregano
salt or not, to your taste
Rub fish with a light coating of olive oil then dust completely with blackening spice. The more you put on the spicier it is.
Grill or saute fish on a hot grill or saute pan about 3 to 4 minutes per side.
