Mushroom & Tomato Bruschetta Pasta
Ingredients
6 cups tomatoes, diced
6 cups mushrooms, sliced
1/2 cup Parmesan cheese, diced
1/2 cup Asiago cheese, diced
1/2 cup extra virgin olive oil
1/4 cup fresh basil, thinly sliced
3 tablespoons fresh garlic, chopped
1 tablespoon kosher salt
1 teaspoon black pepper
1 pound cooked pasta, farfalle or bow tie
Directions
Combine all ingredients except pasta in a large bowl. Let sit at room temperature for 30 minutes. Pour in hot cooked pasta and combine. Serve at room temperature or refrigerate and serve cold. Serves 6 to 8 people.
