Mushroom and Tomato Bruschetta Pasta

Ingredients

  • 6 cups tomatoes, diced

  • 6 cups mushrooms, sliced

  • 1/2 cup Parmesan cheese, diced

  • 1/2 cup Asiago cheese, diced

  • 1/2 cup extra virgin olive oil

  • 1/4 cup fresh basil, thinly sliced

  • 3 tablespoons fresh garlic, chopped

  • 1 tablespoon kosher salt

  • 1 teaspoon black pepper

  • 1 pound cooked pasta, farfalle or bow tie 

Directions

  • Combine all ingredients except pasta in a large bowl. Let sit at room temperature for 30 minutes. Pour in hot cooked pasta and combine. Serve at room temperature or refrigerate and serve cold.  Serves 6 to 8 people.
