Pico de Gallo
4 cups plum tomatoes, squeeze out the seeds
1 1/2 cups cilantro, finely chopped
1 cup red onion, finely chopped
1/4 cup fresh lime juice
1 tablespoon fresh garlic, finely chopped
1 large jalapeno pepper(about 3 inches long), roasted, peeled and finely chopped
2 teaspoons salt
In large bowl, combine all ingredients . Stir well. Let flavors meld for 30 minutes or more.
Best served at room temperature. Enjoy!
