Pico de Gallo

Ingredients

  • 4 cups plum tomatoes, squeeze out the seeds

  • 1 1/2 cups cilantro, finely chopped

  • 1 cup red onion, finely chopped

  • 1/4 cup fresh lime juice

  • 1 tablespoon fresh garlic, finely chopped

  • 1 large jalapeno pepper(about 3 inches long), roasted, peeled and finely chopped

  • 2 teaspoons salt 

Directions

  • In large bowl, combine all ingredients . Stir well. Let flavors meld for 30 minutes or more.

  • Best served at room temperature. Enjoy!
