Peanut Noodle Salad


  • 1 package asian rice noodles or linguine. Follow cooking instructions on package.

  • 1 package broccoli slaw or classic slaw

  • 2 cups fresh sweet bell pepper, thinly sliced

  • 2 cups cucumber, diced

  • 1/2 cup scallions, thinly sliced

  • 1/2 cup cilantro, coarsely chopped

  • Sesame seeds and or peanuts to taste


  • While noodles cook, chop and place veggies in a large bowl add half of the dressing mixture. When the noodles are drained and cooled add to veggies. Add remaining dressing and toss well to coat and distribute noodles and veggies. This salad should be made at least an hour before serving. Serve topped with sesame seeds or peanuts.

  • Serves 6 people. Enjoy!
