Simply Delicious Caesar Dressing
1 cup extra virgin olive oil
3/4 cup fresh lemon juice
1 cup Parmesan cheese, grated
2 tablespoons fresh garlic, chopped
2 tablespoons Dijon mustard
1 can anchovies
1 tablespoon worcestershire sauce
1 teaspoon black pepper
1 teaspoon salt
Put all ingredients in food processor except for olive oil and Parmesan cheese. Blend until smooth. Slowly drizzle in olive oil until thickened. Add cheese last with just a couple of quick pulses.
Serves 4 to 6 people on a salad or makes enough marinade for about 3 to 4 pounds of fish. Enjoy!
