Savory Herb Crab Meat Stuffing

Ingredients

  • 2 tablespoons olive oil

  • 1/4 cup shallots, finely chopped

  • 2 tablespoons garlic, minced

  • 1 pint (2 1/2 cups) grape tomatoes

  • 1 cup fresh baby spinach, firmly packed

  • 1/2 cup manchago cheese, grated

  • 1 tablespoon fresh oregano

  • 1/4 teaspoon crushed red pepper flakes

  • 3/4 teaspoon kosher salt

  • 1/2 cup (8 ounces) fresh crab meat, finely chopped by hand

  • 1 cup panko bread crumbs

Directions

  • In saute pan, heat 2 tablespoons olive oil, saute shallots 2 minutes, add garlic, saute for 1 minute.

  • Transfer mixture to food processor, add tomatoes, spinach, cheese, red pepper flakes, oregano, and kosher salt.

  • Pulse until just combined.

  • Put mixture into bowl and add panko crumbs and crab meat. Mix well by hand.
