Savory Herb Crab Meat Stuffing
2 tablespoons olive oil
1/4 cup shallots, finely chopped
2 tablespoons garlic, minced
1 pint (2 1/2 cups) grape tomatoes
1 cup fresh baby spinach, firmly packed
1/2 cup manchago cheese, grated
1 tablespoon fresh oregano
1/4 teaspoon crushed red pepper flakes
3/4 teaspoon kosher salt
1/2 cup (8 ounces) fresh crab meat, finely chopped by hand
1 cup panko bread crumbs
In saute pan, heat 2 tablespoons olive oil, saute shallots 2 minutes, add garlic, saute for 1 minute.
Transfer mixture to food processor, add tomatoes, spinach, cheese, red pepper flakes, oregano, and kosher salt.
Pulse until just combined.
Put mixture into bowl and add panko crumbs and crab meat. Mix well by hand.
