3 cups water
1 1/2 cups brown rice
1 cup sweet onion, finely chopped
2 tablespoons fresh garlic, finely chopped
2 tablespoons extra virgin olive oil
1 tablespoon lime zest
2 teaspoons sea salt
1/4 teaspoon saffron
In a pot with a tight fitting lid, heat extra virgin olive oil, add onion, saute for 2 to 3 minutes.
Add garlic and brown rice, saute for 3 to 4 minutes, add remaining ingredients and bring to a boil.
Lower heat to a simmer. Put lid on pot and cook for 40 minutes.
Fluff with a fork before serving.
