Saffron Rice

Ingredients

  • 3 cups water

  • 1 1/2 cups brown rice

  • 1 cup sweet onion, finely chopped

  • 2 tablespoons fresh garlic, finely chopped

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon lime zest

  • 2 teaspoons sea salt

  • 1/4 teaspoon saffron

Directions

  • In a pot with a tight fitting lid, heat extra virgin olive oil, add onion, saute for 2 to 3 minutes.

  • Add garlic and brown rice, saute for 3 to 4 minutes, add remaining ingredients and bring to a boil.

  • Lower heat to a simmer. Put lid on pot and cook for 40 minutes.

  • Fluff with a fork before serving.
