Thai Fish Soup
Ingredients
8 cups fish stock (we carry this or make your own)
2-13.5 ounce cans coconut milk (you can use lite coconut milk)
1 cup fresh lime juice
1 cup fresh cilantro, chopped
1 cup green onions, sliced thin
1/2 cup fresh ginger, peeled and finely chopped
1/2 tablespoon fresh garlic, chopped
1/2 cup thai fish sauce
3/4 cup red pepper, chopped
3/4 cup yellow pepper, chopped
2 tablespoons lemon zest
2 tablespoons lime zest
1 tablespoon sriracha hot sauce
2 pounds firm fish, skinned and chunked, such as halibut, snapper, marlin, or tilapia (most fish or seafood will work in this recipe)
1/4 cup fresh cilantro, coarsely chopped
Directions
Bring fish stock to a simmer, add all other ingredients, except the fish and 1/4 cup cilantro. Bring back to a simmer. Cook for about 5 minutes. Add fish and continue to simmer for 8 to 10 minutes. Add cilantro,
