Crunchy Terry-aki Salmon
1 cup Terry-aki marinade (available at Dirk's)
1/2 cup soy sauce
1 cup panko bread crumbs
1 pound fresh salmon fillet, skinned (one piece)
1/4 cup pine nuts, coarsely chopped (optional)
Preheat oven to 450 degrees
Brush foil lined pan with olive oil
Mix Terry-aki marinade with soy sauce
Brush salmon with about 1/3 marinade. Cover fish with panko crumbs, sprinkle with pine nuts then pour remaining marinade over fish, covering the crumbs. Let rest for 10 minutes at room temperature. Put fish in oven and cook for 15 minutes. Then place under the broiler for about 2 minutes, just to crisp up topping.
This recipes serves two good eaters or three light ones. Enjoy!
