Simple Roasted Vegetables

Ingredients

  • 2 cups fiddle head ferns

  • 2 cups patty pan squash

  • 12 whole wild ramps, leaves included

  • 1/2 cup garlic cloves

  • 1/4 cup extra virgin olive oil

  • 1 tablespoon herb sea salt 

Directions

  • Preheat oven to 450 degrees.

  • Combine vegetables with olive oil and salt. Place on a baking dish, roast in oven until crisp/ tender, about 20 minutes.
